1. Sweet potato soup

Ingredients
2 medium sweet potatoes (peeled)
1 tablespoon olive oil
1 onion (finely chopped)
2 garlic cloves (minced)
1 teaspoon ginger powder
1-2 teaspoons mild curry paste
4 cups chicken or vegetable stock
A handful of pumpkin seeds
Method
1. Chop up sweet potatoes into small, 2cm cubes and set aside.
2. In a large saucepan, heat oil over medium heat.
3. Add onion, garlic, ginger and curry paste.
4. Cook for 3 minutes or until soft, stirring occasionally.
5. Add sweet potatoes and stir for a minute until coated.
6. Add broth and bring to a boil.
7. Reduce heat and cover with a lid. Simmer for 12 minutes or until potatoes are tender.
8. Let cool and place in a blender.
9. Puree until it reaches a soup consistency and top with pumpkin seeds to serve.
2. Cauliflower cheese soup
Don’t worry if your kid doesn’t like cauliflower; the yumminess and creaminess of this soup will convert even the most obstinate cauliflower-hater!
Ingredients
A knob of butter
1 large onion (finely chopped)
1 large cauliflower (leaves trimmed and chopped into florets)
1 medium potato (peeled and chopped into chunks)
700ml chicken or vegetable stock
400ml milk
100g mature Cheddar (diced)
A pinch of salt
Method
1. Place butter in a large saucepan heated to medium.
2. Add onion and cook for 5 minutes or until softened, stirring often.
3. Add the cauliflower, potato, stock, milk and salt. Bring to a boil, then reduce the heat. Cover with a lid and leave to simmer for about 30 minutes, until cauliflower is soft.
4. Let cool, then place in a blender and blend until you get a thick and creamy soup.
5. Top with cheese pieces to serve.
3. Chicken soup
There is nothing like a hearty bowl of chicken soup to warm the body and soul! This recipe is a guaranteed crowd pleaser.
Ingredients
1 tablespoon olive oil
½ medium onion (chopped)
1 medium carrot (diced)
650ml rich chicken stock
½ teaspoon fresh thyme leaves
50g frozen peas
85g canned sweetcorn
55g cooked white rice
110g cooked chicken breast (shredded)
1 teaspoon salt & pepper
Method
1. In a large saucepan, heat oil to medium.
2. Add onion and cook for 5 minutes or until softened, stirring often.
3. Add carrot, stock and thyme and simmer for 5 minutes or until carrot softens.
4. Add the peas and sweetcorn and simmer for 3 minutes.
5. Add the shredded chicken, rice and seasonings to the soup. Simmer for 2 minutes.
6. Serve warm!
